freezable bean burritos

at qdoba they always ask pinto or black beans. i'm always the black bean type, but this recipe is fantastic. they are great for freezing and bringing to work for lunch. folding a burrito was always tricky to me. if you just aren't quite sure, check out this link. 

bean burritos

1 c brown rice, cooked
2 tbl olive oil
1 large onion, chopped
4 garlic cloves, chopped
2 jalepenos, de-seeded & chopped
1/2 t cumin
10 large whole grain tortillas
3 tbl tomato paste
3 cans pinto beans
3/4 bag frozen corn
6 scallions
2 c monterey jack cheese
salt & black pepper

1. cook rice. cook onion, jalepeno, garlic & cumin in oil. season with salt and pepper. cook for 10 minutes and add tomato paste. cook 1 minute. add beans & 1 1/2 cup water. bring to a boil and simmer for 15 minutes. add corn and scallions.
2. stuff tortillas with rice, bean mixture and cheese.
3. heat saute pan to medium heat. spray with non-stick cooking spray. cook burritos on all sides browning tortilla.
