potato & zucchini cakes

this is by far one of the best side dishes. great in the summer with any grilled meat. you can freeze them and stick under the broiler when you want to eat them again.

potato & zucchini cakes

3 c zucchini, grated
1/2 t salt
3 c potatoes, grated
1/2 c onion, grated
1/2 c flour
1/4 c parmesan, grated
1 egg
1 t salt
1/4 t cayenne pepper
1/2 tbl baking powder

1. combine zucchini & salt. set in colander and strain for 5 minutes. wring dry.
2. combine rest of ingredients.
3. heat 2 tbl olive oil in skillet. drop potato mixture in oil 1/4 c at a time. flatten as cooking to 1/2" thick. saute for 7 min on each side or until cooked.
