this recipe comes from my second mother, mary. we've referred to it as "mary's meatballs" for as long as i can remember. the real name of the recipe remains a mystery.
be sure to pat the potatoes dry after shredding or your meatballs will fall apart.
did you know i have a friend that is afraid of eating anything in meatball form? the concept of meat in a ball grosses her out. it drives me nuts! this is dedicated to you, katie, in hopes that you'll suck it up and try these.
mary's meatballs
1 1/2 lb ground sirloin
1/2 c bread crumbs
1/2 c milk
1/2 c potatoes, peeled and shredded
1 can campbell's french onion soup
1. mix ground sirloin, bread crumbs, milk and potatoes. form large meatballs.
2. brown meatballs in 3 tbl vegetable oil. drain any grease from pan.
3. pour onion soup and 1/2 can of water over meatballs. cover and simmer for 45 minutes on low heat.
